Mongolian Beef with Broccoli Red Rice

Ingredients

Broccoli Rice

  • 1 broccoli, roughly chopped
  • 1/2 cup red rice

Beef

  • 1 carrot, halved lengthways & thinly sliced
  • 1 pack beef sirloin steaks, fully trimmed of fat & cut into 1cm strips
  • 2 tsp sesame seeds
  • 1 pack Mongolian sauce

To Serve

  • 2 spring onions, thinly sliced

Steps

  1. Bring a pot of salted water to the boil.
  2. Prep broccoli & cook rice. Prep broccoli. Cook rice in pot of boiling water for about 25 minutes, until tender. Add broccoli to pot for final 3 minutes of cook time. Drain, return to pot and cover to keep warm.
  3. Prep vegetables & beef. Prep carrot and spring onions. Trim beef of fat then cut into 1cm thick strips.
  4. Cook beef. Heat 1/2 tsp oil in a medium frypan on medium-high heat. Cook carrot for 2-3 minutes, until tender. Remove from pan and return pan to high heat with 1/2 tsp oil. Cook beef with a pinch of salt and sesame seeds for 2-3 minutes, until browned.
  5. To finish. Return vegetables to pan along with Mongolian sauce and simmer for about 2 minutes, until slightly thickened. Season to taste with salt and pepper.
  6. Serve rice with beef. Sprinkle over spring onions.
