Greek Falafel Mezze Plates with Hummus, Bulgur Pilaf & Olives

Ingredients

Bulgur

  • 1/2 brown onion, thinly sliced
  • 1 Tbsp sumac blend
  • 1/2 cup bulgur wheat
  • 1 1/4 cups vegetable stock

Falafel

  • 300g falafel mix
  • 1 tsp sumac blend

Garnishes

  • 1 tomato, diced
  • 1 Lebanese cucumber, thinly sliced into rounds
  • 50g mixed baby leaf lettuce
  • 30g olives
  • 100g hummus
  • 2 Tbsp yoghurt

Steps

  1. Prep & cook bulgur. Prep onion. Heat a drizzle of oil in a pot on medium-high heat. Cook onion for 2-3 minutes, until softened. Add first measure of sumac blend and cook for 1 minute, until fragrant. Add bulgur, stock and 1/2 tsp salt and bring to a simmer. Once simmering, reduce heat to minimum and cook, covered, for 10 minutes. Remove from heat and leave to steam, covered, for about 5 minutes.
  2. Prep garnishes. Prep tomato and cucumber. Set remaining garnishes aside to serve.
  3. Cook falafel. Heat a drizzle of oil in a non-stick fry-pan on medium-high heat. Add falafel mix to pan and break up with a wooden spoon. Cook falafel for 6-8 minutes, until you have a golden crumbly mixture. Add second measure of sumac blend and a pinch of salt and cook a further minute, until fragrant. Season to taste with salt and pepper.
  4. To finish. Fluff cooked bulgur with a fork and season to taste with salt and pepper.
  5. Serve bulgur and falafel topped with garnishes.
