Peri Peri Lemon Chicken with Smoky Slaw & Super Seeds

Ingredients

Kumara

  • 400g kumara, diced 2cm
  • 1 pack sunflower & pumpkin seed mix

Chicken

  • 1 pack lean chicken breasts, sliced 1cm
  • 1 pack peri peri spices
  • Juice of 1/2 lemon
  • 1 pack peri peri sauce

Smoky Slaw

  • 1 pack slaw
  • 1/2 beetroot, grated
  • 1/2 Lebanese cucumber, grated
  • 1 pack smoked garlic aioli
  • Juice of 1/2 lemon

Steps

  1. Preheat oven to 220°C.
  2. Prep & cook kumara. Toss kumara on a lined oven tray with 1 tsp oil. Season and roast in oven for 25 minutes, until tender and golden. Add seeds to tray for the final 10 minutes of cook time.
  3. Prep & cook chicken. Pat chicken dry and slice into 1cm thick strips. Toss in a bowl with peri peri spices and season with salt. Heat 1 tsp oil in a fry-pan on medium-high heat. Cook chicken for 5-6 minutes, turning, until golden and cooked through.
  4. Remove pan from heat and add lemon juice and peri peri sauce. Toss to coat and season to taste with salt and pepper.
  5. Prep & make slaw. In a bowl, toss all slaw ingredients together and season to taste with salt and pepper.
  6. Serve slaw and kumara with chicken.
