Herbed Crumbed Beef with Spiced Wedges & Smoky BBQ Mayo

Ingredients

Wedges

  • 800g potatoes, cut into wedges
  • 1 pack smoky spices

Slaw

  • 350g slaw
  • 75g baby spinach

Beef

  • 600g beef sirloin steaks
  • 150g herbs de Provence crumb
  • 1/4 cup flour
  • 1 egg

To Serve

  • 150g smoky BBQ mayo

Steps

  1. Preheat oven to 220°C. Prep & cook wedges. Prep potatoes and toss with smoky spices and a drizzle of oil on a lined oven tray. Season with salt and pepper and roast for about 30 minutes, until tender.
  2. Prep slaw. In a bowl, combine slaw and spinach with a drizzle of oil and vinegar. Season to taste with salt and pepper.
  3. Prep beef. Pat beef dry. Place herb crumb on a plate. Combine beef and flour in a bowl and toss to coat. Add egg to bowl and toss to coat. Place each piece of beef in crumb and press to stick. Shake off any excess as you go.
  4. Cook beef. Heat a drizzle of oil in a large fry-pan on medium heat. Cook beef, in batches, for about 3-4 minutes each side or until crumb is golden. Wipe out pan and add extra oil as needed.
  5. Serve beef and wedges with slaw and smoky BBQ mayo.
