Pork Ribs with Wedges and BBQ Sauce

  • 800g potatoes, cut into wedges
  • 1 pack wedge spices


  • 2 carrots, grated
  • 1/2 cabbage, shredded until you have 3 cups worth
  • 1/2 pack baby spinach, roughly chopped
  • 3 Tbsp mayo


  • 1 pack pork ribs
  • 1/2 pack BBQ sauce

To Serve

  • Remaining BBQ sauce
  • 1/2 cup sour cream


  1. Preheat oven to 220°C. Prep & cook wedges. Toss potato wedges with wedge spices and a drizzle of oil on a lined oven tray. Season and roast for about 30 minutes, until tender and golden.
  2. Prep & make slaw. Toss slaw ingredients in a bowl to combine. Season to taste.
  3. Cook ribs. Place ribs on a lined oven tray and brush with first measure of BBQ sauce. Cook, below wedges, for about 20 minutes or until cooked through.
  4. Serve ribs and wedges with remaining BBQ sauce, sour cream and slaw on the side.
